This recipe comes from Whole Foods Market, but I used to make mine this way all the time too, but without the sugar. There is plenty of sugar in the fruit juices already

Homemade Jello

Serves 4

This treat is great with many of your favorite juices or fruit nectars (avoid pineapple, kiwi and papaya juice though). Vary the fresh fruit according to season; we like raspberries, sliced grapes and blueberries.

Ingredients

2 cups berry juice
1 tablespoon unflavored gelatin
1 tablespoon sugar
1/2 cup fresh fruit

Method

Pour 1 cup of the juice into a medium heatproof bowl. Sprinkle gelatin over juice and dissolve; set aside.

Combine remaining 1 cup juice and sugar in a small saucepan. Bring just to a boil, stirring to dissolve the sugar. Remove from the heat.

Pour hot juice mixture into gelatin mixture and stir to combine. Transfer to 4 ramekins, small ceramic bowls or 1 medium bowl. Add fruit and chill for 4 hours or until firm.

 

I stopped making jello this way when Larry was diagnosed with diabetes; as I am still thinking although much healthier, is still too much sugar.

4 envelopes Knox Unflavored Gelatine
1 c. cold fruit juice
3 c. fruit juice heated to boiling


In bowl, sprinkle gelatin over cold juice; let stand 1 minute. Add hot juice and stir until gelatin is completely dissolved. Pour into 9 x 13 pan, chill until firm. Cut into 1 inch squares or use small cookie cutters to make shapes. Makes about 9 dozen squares.

Jello shots=FUN.
The recipe is different for shots though because of the amount of liquid used. Also if I'm correct, you add the alcohol LAST, because the boiling water would burn off the liquor if added earlier.
